Banana muffins!!!! Really moist and yummy!
This recipe is a keeper and easy enough to do that you can involve your 2 year old!!
Banana muffin recipe
Banana Muffins (makes 12 muffins)
3 or 4 Large bananas, mashed (I used 3)
1/2 cup white sugar (used slightly less than 1/2 cup)
1 slightly beaten egg
1/3 cup melted margarine or butter (used vegetable oil instead)
1/2 teaspoon salt (omitted)
1 1/2 cups self raising flour
Mix the mashed banana, sugar, egg and margarine together. Set aside. In a separate bowl, mix together salt and flour. Mix wet and dry ingredients all together! Pour into greased muffin tins, and bake in 350 degrees F (180 celcius) oven for approximately 20 minutes. Enjoy!
*can add walnuts or chocolate chip if desired*
Since I wrote that I don't usually achieve much at the weekend, I've really put in A LOT of effort today to do more!!!
After a short grocery shopping trip, we set off to the library. This little prince loves his books. We wanted to join in the Rhyme time session at the library but they started late and mama here wanted to make sure he naps on time so we didn't join. #nomessingwithroutine
Such a scorcher of a day today that I had to buy Magnum ice cream to cool us down. OMG, seriously good!!!! Don't think I've ever tried Magnum and now I'm kicking myself for not trying it earlier. Better than B&J somehow, maybe it's not better, it's just different. The ice cream hit the spot! 😄😄😄
The activity-packed day continues with a trip to the playground!!! So pack! Obviously, everyone else also thought it was a good day to go to the playground!
